Hyderabadi Chicken Dum Biryani Recipe

 Here is an easy recipe to make chicken dum biryani:

Ingredients:

  • 2 cups Basmati rice
  • 1 lb boneless chicken, cut into small pieces
  • 1 cup plain yogurt
  • 1/2 cup fried onions
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 2 green cardamom pods
  • 2 cinnamon sticks
  • 2 bay leaves
  • 2 tbsp biryani masala
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 2 tbsp ghee or clarified butter
  • 2 cups water
  • Fresh coriander leaves, chopped
  • Fresh mint leaves, chopped
  • Saffron, soaked in milk
  • 2 boiled eggs, cut in halves (optional)

Instructions:

  1. Rinse the rice in cold water and soak it for 30 minutes. Drain the water and set it aside.
  2. In a bowl, mix together yogurt, fried onions, ginger paste, garlic paste, biryani masala, red chili powder, turmeric powder, and salt. Add chicken pieces to the mixture and marinate for 30 minutes.
  3. In a deep pot, heat ghee or clarified butter. Add green cardamom pods, cinnamon sticks, and bay leaves. Saute for a few seconds.
  4. Add the marinated chicken pieces and saute for 5-7 minutes.
  5. Add the soaked rice to the pot and mix well with the chicken.
  6. Add 2 cups of water and mix well. Cover the pot with a lid and let it cook on low flame for 20-25 minutes or until the rice is cooked and the water is absorbed.
  7. Once the rice is cooked, sprinkle saffron-soaked milk, coriander leaves, and mint leaves on top.
  8. Serve hot with boiled egg halves (optional).
